Broccoli & Feta Omelet with Toast
Ingredients
Cooking
spray

cup chopped broccoli
2 large
eggs, beaten

tablespoons feta cheese, crumbled
1/4
teaspoon dried dill
2 slices
rye bread, toasted
Preparation
Heat
a nonstick skillet over medium heat. Coat pan with cooking spray. Add broccoli,
and cook 3 minutes.
Combine
egg, feta, and dill in a small bowl. Add egg mixture to pan. Cook 3 to 4
minutes; flip omelet and cook 2 minutes or until cooked through. Serve with
toast.
Honey Grapefruit with Banana
Ingredients
1 (24-ounce)
jar refrigerated red grapefruit sections (about 2 cups)
1
cup sliced banana (about 1)
1
tablespoon fresh chopped mint
1
tablespoon honey
Preparation
Drain
grapefruit sections, reserving 1/4 cup juice.
Combine
grapefruit sections, juice, and remaining ingredients in a medium bowl. Toss
gently to coat. Serve immediately, or cover and chill.
Egg and Rice Salad to Go
Ingredients
1/2 cup cooked brown rice
1 cup cooked green beans, roughly
chopped (3 oz)
1 ripe plum, thinly sliced (3 oz)
2 tablespoons (1/2 oz) chopped walnuts
1 hard-cooked egg, sliced
1 teaspoon sesame oil
2 tablespoons fresh lime juice
1/4 teaspoon kosher salt
Freshly ground black pepper, to taste
Preparation
Combine rice, beans, plum, walnuts, and egg
in a portable container.
Drizzle with sesame oil, lime juice, salt,
and pepper; toss gently to combine. Refrigerate up to 2 days.
Spiced Green Tea Smoothie
Ingredients

cup strong green tea, chilled

teaspoon cayenne pepper
Juice
of 1 lemon (2-3 TBSP)

teaspoons agave nectar
1 small
pear, skin on, cut into pieces

tablespoons fat-free plain yogurt

Preparation
Put
all ingredients in blender. Blend until smooth. Drink cold.
Avocado Whip
Ingredients
2 avocados,
pitted and peeled

cup fresh lime juice (2-3 limes)

cup chopped onion
1/4
teaspoon kosher salt
1/4
teaspoon fresh pepper
Preparation
Combine
all in a food processor; process until smooth (about 30 seconds). Transfer to
serving dish. (To make up to 6 hours ahead, set aside 1 TBSP lime juice;
drizzle over surface and cover with plastic wrap. Refrigerate.) Garnish with
fresh pepper.
Spiced Banana-Almond Smoothie
